Description
This comprehensive curriculum in Food Microbiology and Safety explores the dual role of microorganisms in foodβboth as beneficial agents in fermentation and probiotics, and as hazards causing spoilage and food-borne illnesses. It covers microbial growth factors, chemical spoilage mechanisms, thermal and non-thermal preservation techniques, kitchen hygiene planning, and food safety management systems like HACCP, GMP, and GHP.
π Detailed Course Description
This curriculum provides an in-depth, scientific foundation in Food Microbiology, Food Safety, and Hygiene Management. It explores the dual role of microorganisms in the food industryβboth as vital agents in food fermentation, bioprocessing, and probiotics, and as hazardous vectors responsible for food spoilage and food-borne diseases.
Students will gain a rigorous understanding of intrinsic, extrinsic, and implicit factors affecting microbial growth, chemical spoilage mechanisms, thermal and non-thermal food preservation technologies, Hazard Analysis and Critical Control Point (HACCP) systems, Good Manufacturing Practices (GMP), and Good Hygiene Practices (GHP).
